Lemon Turmeric Hummus

Here’s a delicious AND nutritious way to recover from all those delicious carbs. Packed with anti-inflammatory ingredients, this is a good choice for any day.

The Recipe

4 garlic cloves, unpeeled

1/3 cup fresh lemon juice

1 tsp kosher salt

2/3 cup tahini

1 15-oz can of chickpeas, rinsed and drained

1 lemon zested

1 tsp nubeleaf Organic Turmeric Powder

1/4 tsp curry powder

Directions:

1. In a food processor, coarsely puree the garlic, lemon juice, and salt. Let it rest for 10 mins & then strain  through a fine mesh sieve.

2. Return liquid to the food processor and discard solids. Add tahini and pulse to combine. Add ice water one tablespoon at a time and blend until mixture is smooth, pale, and thick. 

3. Add chickpeas, lemon zest, turmeric and curry powders. Blend until smooth. Season with salt, lemon juice, and turmeric powder as desired. 

4. Drizzle liberally with olive oil.
