Pumpkin Spice Protein Pancakes
These pancakes are incredibly delicious and packed with the goodness of nubeleaf Organic Pumpkin Powder, which provides fiber, vitamins, and antioxidants. Enjoy them as a wholesome breakfast or a guilt-free treat any day!
Ingredients:
- 1 cup oats
- 1/4 cup Nubeleaf Organic Pumpkin Powder
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and cloves)
- 1/2 cup unsweetened almond milk (or your choice of milk)
- 1/2 cup canned pumpkin puree
- 1 egg (or a flax egg for a vegan option)
- 1 tsp vanilla extract
- 1-2 tbsp maple syrup (optional, for sweetness)
- Cooking spray or butter for greasing the pan
Instructions:
1. Combine the oats, Nubeleaf Organic Pumpkin Powder, protein powder, baking powder, and pumpkin pie spice in a blender or food processor. Blend until the oats turn into a fine flour-like consistency.
2. In a separate bowl, whisk together the almond milk, pumpkin puree, egg (or flax egg), vanilla extract, and maple syrup (if desired).
3. Pour the wet ingredients into the dry ingredients and mix until you have a smooth batter. Add more almond milk to reach your desired consistency if the batter seems too thick.
4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
5. Pour 1/4 cup portions of the pancake batter onto the hot skillet. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
6. Repeat until all the batter is used, adding more cooking spray or butter to the skillet as needed.
